Spring Onion and Cayenne Eggs

Some of you have recently been asking me what I do for breakfast. It takes me ages to properly wake up so I really want breakfast to be easy as possible. So my Cayenne and Spring Onion eggs are a perfect fuss-free breakfast that take such little effort!

Serves 1
Cooking Time 15 minutes
1 Egg
Cayenne Pepper
Spring Onions
2 Slices Wholewheat Bread or Tortilla

First off, fill a kettle, enough to cover an egg in a pan AND for a cup of tea, it is morning after all! Put your pan on medium so the boiled water won't boil over. Put your egg in, make your cuppa, head back to bed for 5-10 minutes and go enjoy your tea!
When you return, and have got the sleep from your eyes, take your egg from the pan and put in a bowl of cold water. Chop up your spring onion. I use loads of spring onions so my little tip is to buy a whole bunch, cut them and store them in the freezer, they'll never go off and you can take your time in using them!
De-shell the egg, scoop in a big tablespoon of mayonnaise, a handful of chopped spring onion and sprinkle a little cayenne pepper. This goes well with any egg dish and really gives it some character! Mash this all together into a spreadable filling and consume for your perfect morning protein boost....then make more tea...urgh!

    Loving the cup of tea in a Starburcks coffee mug, lol.

    Suggestion: how about including approximate calories (but only if you can) per meal, then you could go further with this and provide diet suggestions too.

    1. Hi Debs, I'm definitely adding the calorie count, it's a great idea and something I always look for in recipe books and it's rarely there!

      I want people to be able to add to this at any time with their comments, so as annoying as the captcha may be, I want people to be able to add instantly. Hope you understand where I'm coming from!
